
Kheer Recipe

Ingredients
- 750 ml Boiled Milk
- 1 + 1/2 glass Sugar
- 2 glasses Semiya or Vermicelli
- 1 + 1/2 tea spoons Elaichi Powder
- 1 + 1/2 tea spoons Khus Khus
- 4 table spoons Ghee
- Cashew
- Sliced Almonds
- Raisins (Kismis)
Instructions
- Place a Kadai on the stove and heat it for 30 seconds
- Now add 2 tablespoons of ghee. Add cashews and raisins to it, and sauté for 2 minutes or until the color changes to golden over medium flame.
- Remove the roasted cashews and raisins, and add khus khus to the leftover ghee. Sauté it for 2 minutes.
- Remove the khus khus. Add 2 more tablespoons of ghee and add vermicelli or semiya to the kadai. Sauté it until the color changes to golden.
- Now, take a bowl and add 4 glasses of water. Bring it to a boil over high flame.
- Add the roasted semiya to the water in small amounts and stir gently on medium flame, ensuring that lumps are not formed.
- Cook till the semiya is properly cooked and water is absorbed
- Now add the roasted dry fruits (cashew, raisins, khus khus and sliced almonds) and mix.
- Add 1 and 1/2 glasses of sugar and mix. The sugar will turn into syrup (paakam). Continue cooking until the semiya absorbs about 90% of the sugar syrup.
- Now add elaichi powder and mix it properly. Cook it for a minute or two.
- Put off the stove, Semiya Mixture is ready now.
- At this moment, you can directly add the milk to the semiya mixture and serve the Payasam (Semiya Kheer).Alternatively,As per your preference, you can take some of the mixture and add milk to serve the Kheer (you can add more milk if required for your desired consistency).
- Garnish the Kheer bowls with a small amount of khus khus and dry fruits and serve. That's all; the delicious dessert, Semiya Payasam, is ready.
