
Sheer Khurma Recipe
Sheer Khurma is a festive recipe that is traditionally prepared on the eve of Ramadan (Eid-ul-Fitr) by Muslims in India and parts of Asia. Sheer Khurma is made with dry fruits, seviyaan (vermicelli), sugar, and khoya (reduced milk). Ingredients
- 50 gms Chutta Seviyan
- 1 ltr Milk
- 100 gms Sugar
- 2 table spoons Khoya or Mawa or Kova (Unsweetened)
- 4 table spoons Ghee
- 2 pinches Elaichi Powder
- Cashew
- Rasins (Kismis)
- Pista
- Dry Dates
Instructions
- Soak almonds and dried dates overnight. Peel the skin off the almonds and slice both the almonds and dried dates. (adding these slices to Sheer Khurma is optional)
- Soak chironji for an hour and then peel the skin. Afterward, moderately fry the chironji until the color changes to a light golden. (adding chironji to Sheer Khurma is optional)
- Take a deep pan and add 4 tablespoons of ghee. Now add the dry fruits (cashew, almonds, raisins, pistachios, dried dates) and fry them until the color changes to golden.
- Remove the dry fruits and add the Chutta seviyan. Roast them until the color changes to golden.
- Now take an empty deep pan and pour 1 ltr of milk. Bring it to a boil over high flame
- Then, continue boiling over medium flame for 10-15 minutes or until the milk quantity reduces to 3/4th (from 1 liter to 750ml).
- Now, add the roasted chutta seviyan and cook for 5 minutes over medium flame.
- Add sugar and elaichi powder, and mix well.
- Now add unsweetened khoya/mawa/kova and continue cooking for 2 more minutes
